Cut from the Top Sirloin, Sirloin Tip Roasts are the ideal, all around roast. Some marbling through the muscle lends tenderness to the cut, but it is more lean than a cross rib or blade roast. Leftovers? Perfect for beef dips sandwiches on rye bread.
